This week we are eating 'out' (carryout, actually) one night. The rest of our meals are made from ingredients we have stocked in our freezer over the course of the past few weeks...and produce items on sale.
The codfish we're having Sunday is some frozen portions I bought. It's watery when I cook it up as a filet portion, but we discovered that if I dice it fine, squeeze out the excess moisture and then make them into croquettes, the result is quite tasty!
We are trying a couple of new recipes that can be made with items we have on hand as well. Here is our dinner plan for the week:
S - codfish croquettes, steamed rice, cabbage & carrot stir fry, sliced oranges
M - pizza from Pizza Hut (there is a 50% off deal, and we haven't had Pizza Hut in ages!), garden salad with homemade Italian dressing, sliced apples
T - Punjabi chicken with potatoes, cauliflower and peas (new recipe for us), creamy cucumber sauce, fresh cucumber slices
W - hamburger curry stew with rice, raw vegetables w/dip, sliced oranges
R - marinated/grilled pork chops, stuffing, frozen mixed vegetables, sliced apples
F - macaroni and cheese (from a box!) with diced ham mixed in, blackeye peas, home-canned green beans
S - also a new recipe for us: chicken cranberry salad with lemon poppyseed dressing (using pecans instead of almonds - we got 7 pounds of pecans for Christmas), homemade rolls
This is a really affordable week for us, because we have a variety of meat in the freezer. In the past few weeks, we have purchased boneless, skinless chicken thighs for 1.49/lb, hamburger for 1.68/lb, pork shops for .99/lb, ham for .99/lb and chicken breasts for 1.69/lb. We bought oranges 3lb/$1, apples for .88/lb, lettuce for .99 or less per head, cauliflower for .98/lb and cucumbers 3/$1. Generally, we purchase the fresh produce that is on sale and then plan the menu around those items. It saves a lot compared to making a menu without utilizing sale items, and the cyclical nature of sales means that we still get good variety over the course of a few weeks.

Oh gracious that seven pounds of pecans was an awesome gift. I won't share what I paid for 1 pound of shelled PIECES not even halves the other day but I wanted fresh pecans having found the Aldi ones not very good for flavor. Let's just say that was a very nice gift!
